Sorry guys no picture this time, i was way too hungry but, i promise to take one next time
What you need!
============
01] 4 Medium sized aaloo
02] 1 Medium sized Onion
03] 4 cloves of garlic
04] 10 grms of ginger
05] 1 or 2 chopped green chilly or 1 to 1/2 tea spoon of green chilly chutney , depending upon how “chilly” you like it to be ( chutney should not contain any other ingredients…other than green chilly and may be a bit of ginger )
06] 1 or 2 tea spoon of oil to fry
07] 500grm of wheat flour
08] Salt to taste & pinch of turmeric powder (haldi)
(Optional)
09] 1 Medium sized tomato
10] 1/2 tea cup of tomato sauce
(Personally, I would say no no to tomato but some people like the hint of bit sour taste, for which you can actually use lemon, anyway choice is yours)
11] Black pepper ( kali mirch)
12] red chilly power ( i personally don’t like it but you can use it!)
13] 1 tea spoon of cumin seed / Jeera
14] 1 tea spoon of gram masala
15] 1 tea spoon of lemon juice
Preparation
=========
We have to prepare two things! dough & stuffing. I’m sure everyone knows how to prepare the dough so i will skip that and move over to stuffing
1] Boil the potatoes in water for about 10 -15 minutes and better choice is steam cook ‘em in pressure cooker until two whistle blows and take ‘em out within 5 minutes. Yes we need “half-cooked” potatoes so make sure you don’t overcook and make them very soft and tender
2] While potatoes are being cooked , grab the grater and start to grate the
i) Tomatoes (optional)
ii) Ginger
iii) Onion
iv) Garlic cloves
Keep ‘em all in separate bowls (Please…Please don’t chop! and, grater them in big or medium size )
3] Finally chop the green chilly
4] By now, your aaloo should be ready, pill off the skin and grater them as well in big or medium size
5] Now, we are ready to make our tadka!
i) Take 1 or 2 tea spoon of oil in kadai , heat it on slow/medium flame for 3 minutes(trust me, we don’t need more than that)
ii) add cumin seeds (optional ), chopped green chilly or chutney , garlic , onion and fry it for about 2 minute ( you have to keep steer it or else it will burn ). Now add optional tomatoes & tomato sauce ( if you are using lemon juice, please wait for the right time)
iii) Add the aaloo in kadi and turn off the heat immediately and mix aaloo with tadka
iv) Add salt to taste (may be 2/3 tea spoons), turmeric powder, Black pepper (optional), red chilly power (optional), garam masala (optional)
v) if you want to add lemon juice, let the mixture cool down a bit ( for 5 minutes ) or else lemon will make it taste yuck!, so be careful!
6] Once stuffing is cooled enough , you can start preparing your parathas serve them hot with, butter on the top!
PS: reason why i asked not to overcook aaloo is , you will end up having mashed potatoes if you over cook them , which is okay. However grater potatoes allow you to be in better control of shape of your parathas ( be it square, round or triangle ) and, it does taste bit better than mashed potatoes
